Though he hails from the rich culinary landscape of Bacolod, Anglo’s entrance to the Manila dining scene was not without its challenges. The early days of his career were filled with birth pangs as he manoeuvred Manila’s restaurant industry.
With determination and perseverance to elevate Filipino food, he established iconic restaurants like Sarsa, renowned for its flavourful and authentic Filipino dishes.
On the world stage, his restaurant in Dubai, Kooya Filipino Eatery, has been receiving accolades and recognised as a favourite homegrown restaurant in the city. “It’s such a nice affirmation—not just to us but to the Filipino community in Dubai. Finally, we’ve been recognised,” he says.
Mentorship also played a key role in his growth—Joel Binamira, the man behind Market Manila and Zubuchon who caught Anthony Bourdain’s attention, guided Anglo during the establishment of Kooya in Dubai, shaping his approach to presenting Filipino food to the world.
