Chef Watcharaphon Yongbanthom of Benjarong is preparing Miang Pla Nung, a dish that her mom would cook when the whole family's at home. While growing up, Chef Hiroyuki Fukata used to enjoy eating chirashi jyu. This comfort food is a mixture of sashimi favourites which are all fresh.
